Ingredients: 1 cup diced onions. 1 cup chopped carrots. 1 cup sliced celery. 2 cloves minced garlic. 8 cups chicken broth. 1 cup cooked chicken, shredded. 1 cup cooked vermicelli noodles. 1 cup cooked udon noodles. 1 teaspoon dried thyme. 1 teaspoon ground cumin. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish. Lime wedges for serving.
Instructions: In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Saut until vegetables are tender. Pour in chicken broth and bring to a simmer. Add shredded chicken, cooked vermicelli noodles, and cooked udon noodles to the pot. Season with dried thyme, ground cumin, salt, and pepper. Stir well. Simmer for 15-20 minutes, allowing flavors to meld. Adjust seasoning if necessary. Serve hot, garnished with fresh cilantro and accompanied by lime wedges.
