I cannot eat chicken livers without the final addition of pomegranate molasses. So today I received a bottle of molasses from my hometown Marjeyoune from @lesvignesdumarje. I had to prepare this dish, which to tell you the truth I have not made at home since I closed the restaurant. The reason being not able to find a good bottle of pomegranate molasses in the marketplace. This tangy and dark syrup if it is made to perfection without any additives just the fruit, then it adds so much flavour to any dish, chicken livers, vegetables, fattoush, marinating chicken and meat. I cannot tell you how delicious these livers were! They are all gone. Pomegranate molasses is prepared by boiling the juice of sour pomegranates until it is reduced to a thick dark brown liquid. It is worth experimenting with as it adds a subtle and sweet and sour flavour to any dish, although it contains no sugar. Just the pomegranate.
