Homebrewing: Homebrew Competition
I entered and stewarded my first ever homebrew competition a few months ago, and the whole thing was just a disaster. I intended on brewing an Oktoberfest with just enough time for it to finish before the competition. Don't. Ever. Do. That.
First problem was when I went to gather all my ingredients from the brew store, I picked up the wrong yeast. I meant to get my California Lager yeast, but walked away with (and smacked the pack of) an American Wheat WYeast 1010. Not exactly suitable for making an Oktoberfest with... luckily, it was an extract batch so I really only had to pick up a can of Bavarian wheat and some carahell grain to steep in.
Well, my second problem is that I wasn't completely prepared for the crazy molten lava yeast fest that was about to ferment. It was a MESS and because of it, I ended up moving the fermenter into my kitchen sink to finish out the primary. Laziness ensued, so it sat there for a few weeks. Having nearly given up on this batch, I set the half-full fermenter at room temperature for yet another week when a very thin white film started blanketing the top of my beer and some large bubbles started forming. So this beer was sitting in the fermenter from August 29th all the way to October 19th. When it came time to bottle, I took the airlock off to find a dead gnat molding away..... Could things possibly get worse??
3 weeks to competition and I finally bottled my beer. There was no apparent astringency, it was a bit cloudy (but, that is expected from a hefe) and I really didn't have the chance to taste it before it went off... So, when I did, I was SUPER upset. It definitely had a sour, cardboard-like taste to it and the aroma was dull. The color came through well but the taste was basically awful.
