Ingredients: 1 cup coconut oil. 1/2 cup raw honey. 1 cup unsweetened shredded coconut. 1/2 cup raw cacao powder. 1/2 cup chopped nuts e.g., almonds, walnuts. 1/4 cup dried cranberries or raisins. 1/4 cup chopped dark chocolate 85% or higher cocoa content. Pinch of sea salt.
Instructions: In a saucepan, melt the coconut oil over low heat. Once melted, remove from heat and stir in the raw honey until well combined. Add the shredded coconut, raw cacao powder, chopped nuts, dried cranberries or raisins, chopped dark chocolate, and a pinch of sea salt. Mix until everything is evenly coated. Line a baking dish or tray with parchment paper. Pour the mixture into the dish and spread it out evenly, pressing it down firmly. Place the dish in the refrigerator and chill for at least 1 hour, or until the mixture is set. Once set, remove from the refrigerator and cut into bars or squares. Store the homemade candy bars in an airtight container in the refrigerator until ready to serve.
