Homemade marshmallows are a delightful treat that pairs perfectly with hot cocoa. They are fluffy, sweet, and melt in your mouth, adding a touch of luxury to your cozy winter beverage.
Ingredients: 3 tablespoons unflavored gelatin. 1/2 cup cold water. 2 cups granulated sugar. 1/2 cup corn syrup. 1/4 cup water. 1/4 teaspoon salt. 1 teaspoon pure vanilla extract. Powdered sugar, for dusting.
Instructions: In a small bowl, combine the gelatin and 1/2 cup of cold water. Let it sit for about 10 minutes to bloom. In a saucepan, combine the granulated sugar, corn syrup, 1/4 cup water, and salt. Heat over medium heat, stirring until the sugar dissolves. Once dissolved, stop stirring and let it boil until it reaches 240F 115C on a candy thermometer. While the sugar syrup is boiling, microwave the gelatin mixture for about 30 seconds until it's fully dissolved and becomes a clear liquid. Once the sugar syrup reaches the desired temperature, remove it from the heat immediately. Slowly pour the hot syrup into the gelatin mixture while continuously whisking. Be careful as it will be extremely hot. Add the vanilla extract to the mixture and continue to whisk until it becomes thick and white, resembling marshmallow fluff. This may take about 10-15 minutes. Prepare a 9x9-inch 23x23 cm baking dish by greasing it and dusting it with powdered sugar. Pour the marshmallow mixture into the prepared dish and smooth the top with a spatula. Allow the marshmallows to set at room temperature for at least 4 hours or overnight. Once set, turn the marshmallow slab onto a powdered sugar-dusted surface and cut it into squares or desired shapes. Dust the cut marshmallows with more powdered sugar to prevent sticking. Serve these delicious homemade marshmallows with hot cocoa and enjoy!
