On cold days, this hearty and tasty Buffalo Chicken Soup will keep you warm. This soup is a hit with everyone because it has shredded chicken, vegetables, and a spicy kick from the hot sauce.
Ingredients: 1 lb chicken breast, cooked and shredded. 4 cups chicken broth. 1 cup carrots, diced. 1 cup celery, diced. 1 cup onion, diced. 3 cloves garlic, minced. 1/2 cup hot sauce. 1/4 cup butter. 1/4 cup all-purpose flour. 1 cup milk. 1 cup cheddar cheese, shredded. Salt and pepper to taste. Green onions and blue cheese for garnish.
Instructions: In a large pot, melt butter over medium heat. Add diced onions, carrots, celery, and minced garlic. Cook until vegetables are tender. Stir in flour to create a roux. Cook for 2 minutes. Slowly whisk in chicken broth, milk, and hot sauce until smooth. Add shredded chicken and bring to a simmer. Cook for 15-20 minutes. Stir in cheddar cheese until melted. Season with salt and pepper to taste. Serve hot, garnished with green onions and crumbled blue cheese.
