This beef chili bean soup is full of hearty, Mexican flavors and is good for you. It's a hearty and healthy dish that's great for cold days.
Ingredients: 1 lb lean ground beef. 1 onion, chopped. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 can 14 oz diced tomatoes. 2 cans 14 oz each kidney beans, drained and rinsed. 4 cups beef broth. 1 tablespoon chili powder. 1 teaspoon cumin. 1 teaspoon smoked paprika. Salt and pepper to taste. Fresh cilantro for garnish optional.
Instructions: Over medium-low heat, break up the ground beef into crumbles and cook it in a large pot. Put in the minced garlic, chopped onion, and diced bell pepper. Cook the vegetables until they get soft. Beef broth, chili powder, cumin, smoked paprika, salt, and pepper should all be stirred in now. First, bring the soup to a boil. Then, lower the heat and stir it every so often for about 20 minutes. Check the seasoning and make changes if needed. If you want, you can serve it hot with fresh cilantro on top.
