Started as something simple. I had leftover bacon grease in the fridge from when I cooked off Benton’s bacon. It’s so smoky, the house smelled pretty awesome. Anyway, I used the bacon grease instead of shortening and the biscuits came out great. So Chef liked the aroma but wanted more bacon flavor. I was going for aroma but now I’m thinking that would be a damn good biscuit. Almost like a crackling bread. (This is where I name drop, it fit in this accounting) Then I remember that Years ago I got a recipe for crackling bread from Charlie Musselwhite. I could use it as a guide for a ratio of bacon or cracklings to other dry ingredients. So, by the wknd I’ll get another test batch going.
