I feel like I went through the stages of grief with how this may affect my education....sitting in the acceptance phase for now.

Thanks y’all! It’s easier than it looks, and the glaze is definitely AMAZING and I’m gonna make it again soon (I’m thinking black and white cookies, but making the white icing be matcha glaze instead). Here’s the recipe: https://cooking.nytimes.com/recipes/1020337-raspberry-mochi-butter-cake-with-matcha-glaze I think it’s a little weird to call it a “mochi cake” when it’s a rice flour cake without the consistency of mochi (although I suppose if your only exposure to rice flour is in the form of mochi, the flavor would be reminiscent, especially because they both have coconut milk). But regardless, it means I have leftover rice flour to try to make mochi with soon :)
