Ingredients: 4 slices of whole wheat bread. 1 cup of hummus. 1/2 cup of cherry tomatoes, sliced. 1/2 cup of cucumber, thinly sliced. 1/4 cup of red onion, finely chopped. 1/4 cup of feta cheese, crumbled. 2 tablespoons of fresh basil leaves, chopped. 2 tablespoons of olive oil. Salt and pepper to taste. Optional toppings: avocado slices, roasted red pepper, or arugula.
Instructions: Toast the pieces of whole wheat bread until they are crispy and golden brown. Set out the toppings for your hummus toast while the bread toasts. Spread a lot of hummus on one toasted slice of bread for the first variation. Cherry tomatoes, cucumber, and red onion should be put on top of it. Put some olive oil on top and add salt and pepper to taste. You can make the second version by putting hummus on another toasted piece of bread. Break up some feta cheese and put some fresh basil leaves on top. Add a little olive oil at the end. Spread hummus on a third piece of toasted bread for the third variation.
