A refreshing and hydrating cold watermelon soup perfect for hot summer days. The combination of sweet watermelon, crisp cucumber, and coconut water creates a delightful and cooling experience.
Ingredients: 6 cups seedless watermelon, diced. 1 cucumber, peeled and diced. 1/4 cup fresh mint leaves, chopped. 1/4 cup red onion, finely chopped. 1 lime, juiced. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1 cup chilled coconut water.
Instructions: Dice the cucumber, red onion, mint leaves, lime juice, salt, and black pepper. Put them all in a blender. Mix everything together until it's smooth. Put cold coconut water into the blender and blend it again until the soup is the consistency you want. Put the soup in the fridge for at least two hours before you serve it. Put the cold watermelon soup in bowls and top with extra mint leaves if you want.
