These delightful Cat in the Hat Cookies are a whimsical treat inspired by the beloved Dr. Seuss character. The colorful striped pattern brings the cat's iconic hat to life, and the combination of white chocolate and soft cookie dough is a delightful match.
Ingredients: 2 1/4 cups all-purpose flour. 1/2 teaspoon baking soda. 1 cup unsalted butter, softened. 1/2 cup granulated sugar. 1 cup packed brown sugar. 1 teaspoon vanilla extract. 2 large eggs. 2 cups white chocolate chips. Red food coloring. Blue food coloring.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put the flour and baking soda in a small bowl and mix them together. Put away. Melt the butter and mix it with the brown sugar, granulated sugar, and vanilla extract in a large bowl until the mixture is smooth and creamy. One at a time, beat in the eggs until they are well mixed in. Slowly add the flour mixture to the wet ingredients and mix them together until they are just barely combined. Add the white chocolate chips and mix them in. Split the dough into three equal pieces. Leave some of it the way it is. For the second part, add red food coloring and for the third part, add blue food coloring. Knead each part until the color is evenly spread. Roll out a small amount of each color of dough into a ball. Put the balls next to each other to give each cookie the "Cat in the Hat" striped look. Put the cookie dough balls on a baking sheet that has parchment paper on it. Put it in an oven that is already hot and bake it for 10 to 12 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down.
