Ingredients: 4 chicken breasts. 1 cup shelled pistachios, chopped. 1/2 cup grated Parmesan cheese. 1/2 cup cream cheese. 1/4 cup heavy cream. 2 cloves garlic, minced. Salt and pepper to taste. 2 tablespoons olive oil. 1 tablespoon butter. Fresh parsley for garnish.
Instructions: Before you start cooking, heat the oven to 375F 190C. Add salt and pepper to the chicken breasts and cut them into butterfly shapes. Chop the pistachios and put them in a bowl. Add the cream cheese and minced garlic. Put some of the pistachio mixture inside each chicken breast and use toothpicks to hold them together. In a pan, heat the olive oil over medium-high heat. For about three to four minutes on each side, sear the stuffed chicken breasts until both sides are golden brown. Put the chicken breasts in a baking dish and bake them in a hot oven for 20 to 25 minutes, or until they are fully cooked. Make the Parmesan cream sauce while the chicken is in the oven. Melt the butter over medium-low heat in the same pan that you used to sear the chicken. Mix in the heavy cream and grated Parmesan cheese, making sure the sauce stays smooth and gets thick. Take out the toothpicks after the chicken is cooked and serve it with Parmesan cream sauce on top. Before serving, sprinkle with fresh parsley.
