Ingredients: 250g chocolate cookies. 100g unsalted butter, melted. 300g dark chocolate, chopped. 300ml heavy cream. 1 tsp vanilla extract. pinch of salt. chocolate shavings or cocoa powder for garnish optional.
Instructions: In a food processor, pulse chocolate cookies until finely ground. Transfer ground cookies to a bowl and mix in melted butter until well combined. Press the mixture firmly into the bottom and up the sides of a tart pan. Chill crust in the refrigerator while preparing the ganache filling. In a saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add chopped dark chocolate, vanilla extract, and a pinch of salt. Let it sit for a minute, then stir until the chocolate is completely melted and the mixture is smooth. Pour the ganache into the prepared crust and spread it evenly. Refrigerate the tart for at least 2 hours, or until set. Once set, garnish with chocolate shavings or dust with cocoa powder if desired before serving.
