i recently got an induction cooktop - one "burner" - because we needed to concoct something for our beekeeping (oxalic acid pads, used in varoa mite management)
the bee expert whose example we followed uses an induction cooktop and the reasons seemed sufficient to pick one up, and it's turned out fantastic
i'm a dyed-in-the-wool gas cooker fan, but let me tell you, there's only one two three (i better post this soon before coming up with another) things right now that keep me from tossing the gas cooker:
our ancient gas stove looks really really neat
it doesn't require any electricity
it works with the scotch bowl that i use as a wok and deep-fryer
(not a concern for me so not counted in the above "three": aluminum cookware doesn't work on it at all; the traditional Bialetti moka pot is aluminum and won't work on them - but our moka pots are all steel and work fine. can be mitigated with an adapter disc - basically a steel plate that you put on the cooktop and your aluminum pot on top of that, the disc gets hot and heats your pot... but then your induction cooktop is turned into a normal electric hob, for those pots)
but, the induction cooktop
zero inside-house emissions (makes them ideal for campers/caravans - propane flames not only emit carbon dioxide and carbon monoxide, but lots of water vapor as well)
the cooker itself doesn't even get hot except by contact with a pan that gets hot
could run even if the gas runs out... as long as the sun's shining (solar panels; battery backup)
immediate temperature changes - actually faster than gas, because you don't need the heat to go all the way through the pan - the heat immediately is generated in the entire base of the pan, not starting from the outside going in
the sides of the pot don't get hot -- this is why the scotch bowl doesn't work (one of the negatives i mentioned; a wok with only a hot base sucks, a wok needs a high flame and hot sides as well as base), but it's super nice when heating things that are milk or egg based; since there are no flames or superheated gasses licking the sides of the pot, you don't get a line of scaled or burned stuff up on the sides of the pot
the cooker i got has a temperature setting and can actually hold a liquid at that temperature pretty well. unfortunately the temps are multiples of 20°F (120, 140, 160, ...) but that 160 is very nice for doing hot-yolk stuff (like ice cream custards) and the 360/380 setting is good for deep frying. no having to adjust the heat; i still measure the temp just to make sure but so far it's been very good, +/- a few degrees
it even has a timer... last time i made my ginger brew i made the stuff, set the temperature for an almost-simmer (180°F), set the timer (15 minutes) and completely forgot about it. perfect result.
my ideal would be a retro drop-in that i could replace two of the four burners of our 1950s gas range; lately the range has just been closed (it has a neat cover) and the single-burner cooktop is sitting on top of it
i'm looking forward to using it for canning later this summer. it's not fun to have a high flame boiling water in a warm house and the induction will reduce the resultant waste heat in the house
