Ingredients: 1 cup all-purpose flour. 2 tablespoons cocoa powder. 2 tablespoons sugar. 1 tablespoon baking powder. 1/8 teaspoon salt. 1 cup non-dairy milk. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract. 1/4 cup crushed vegan Oreo cookies, plus more for topping. Vegan whipped cream, for topping optional. Maple syrup, for serving.
Instructions: In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt. In a separate bowl, mix the non-dairy milk, apple cider vinegar, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the crushed Oreo cookies. Heat a non-stick pan over medium heat and lightly grease with oil or cooking spray. Pour 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface. Flip the pancake and cook for an additional 1-2 minutes.
