Without gluten or animal products, you can enjoy fluffy, tasty pancakes. For a cozy breakfast or brunch, these vegan and gluten-free maple pancakes are great.
Ingredients: 1 cup gluten-free all-purpose flour. 2 tablespoons ground flaxseed. 2 tablespoons maple syrup. 1 tablespoon baking powder. 1/4 teaspoon salt. 1 cup almond milk. 1 teaspoon vanilla extract. 2 tablespoons coconut oil for cooking.
Instructions: Gluten-free all-purpose flour, ground flaxseed, baking powder, and salt should all be mixed together in a bowl. The dry ingredients should now have maple syrup, almond milk, and vanilla extract added to them. As you mix, a smooth batter will form. Put some coconut oil in a nonstick skillet and heat it over medium-low heat. For each pancake, put 1/4 cup of batter on the pan. Start cooking when the top starts to bubble. Then turn it over and cook until both sides are golden brown. If you need to, add more coconut oil to the pan and do it again with the rest of the batter. Warm it up and serve it with maple syrup and fresh fruit.
