Quinoa, Sweet Potato, Bean and Cashew Wraps
Creamy cashew sauce:
• 1 cup raw cashews (soak in hot water / 2 hours and drain) • 2-3 clove garlic • 3/4 cup almond or cashew milk • 1/3 cup nutritional yeast • 1 tsp lime zest • 2 tbsp fresh lime juice • 1-2 tsp paprika • ¼ to ½ tsp Himalayan pink salt • fresh ground pepper to taste Filling Ingredients:
• ½ cup chickpeas • ½ cup pinto beans • ½ cup dried quinoa (1 1/2 cups cooked) • 1 small sweet potato, cut into ¼ in (1.25 cm) cubes • 1 tablespoon virgin olive oil • 1 small red onion, thinly sliced • 1 tsp ground cumin • 1 tsp ground coriander • ½ tsp paprika • ¼ tsp cayenne (optional) • ½ cup fresh cilantro, chopped
• 6-10 whole wheat tortillas
Instructions:
Preheat oven to 400° F. Dice sweet potato into ¼ inch cubes then toss with olive oil and spread on a greased baking sheet. Roast until tender, 20 - 30 minutes, stirring once halfway through. Once cooked cool completely and set aside.
Drain and rinse the chickpeas and pinto beans transfer to a saucepan. Cover with fresh water and bring to a boil for 20 to 30 minutes. Drain and transfer to a medium bowl and let cool to room temperature. While the sweet potatoes and beans are cooking, place quinoa into a separate pot with half of the salt. Bring quinoa to a boil with 1 cup of water of vegetable broth, reduce to low and cook for 20 minutes until all of the liquid has been absorbed. Slice red onion thinly and cut into ½ inch pieces. Chop cilantro, then toss all of the filling ingredients including the spices in a bowl until mixed thoroughly.
Place all of the cashew sauce ingredients into a food processor and blend until creamy and smooth. Mix the sauce with the filling ingredients ½ at a time, stop adding when filling holds together but isn’t saturated.
Place tortillas in foil and warm in the oven at 350° F for 10 – 12 minutes.
Place filling into a warm tortilla and fold in the sides and roll up tightly. Serve with salad; you could use any of the leftover cashew sauce as a dressing. Sprinkle salad with pumpkin and sunflower seeds.
