Ingredients: 2 lbs beef chuck roast, cut into chunks. 1 cup beef broth. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon smoked paprika. 1 teaspoon chili powder. 1/2 teaspoon black pepper. 1/2 teaspoon salt. 1 tablespoon vegetable oil. 1 lime, juiced.
Instructions: Season beef chunks with cumin, smoked paprika, chili powder, black pepper, and salt. Set Instant Pot to 'Saute' mode and heat vegetable oil. Add seasoned beef chunks and sear until browned on all sides. Add sliced onions and minced garlic, saut for 2-3 minutes until softened. Pour in beef broth and lime juice, deglaze the pot by scraping the bottom with a wooden spoon. Close the Instant Pot lid, set to 'Pressure Cook' for 45 minutes on high pressure. Once done, allow natural pressure release for 10 minutes, then quick release any remaining pressure. Shred the beef using two forks, mixing it with the flavorful juices. Serve the shredded beef in tacos, burritos, or over rice.
