This Keto-friendly version of Corned Beef and Cabbage is cooked in either an Instapot or slow cooker, making it an easy low-carb meal. The combination of tender corned beef with flavorful spices and cabbage creates a satisfying dish perfect for a hearty dinner.
Ingredients: 1.5 lbs corned beef brisket. 1 head of cabbage, chopped. 1 onion, sliced. 4 cloves garlic, minced. 1 cup beef broth. 1 tablespoon whole mustard seeds. 1 tablespoon apple cider vinegar. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon ground mustard. 1/4 teaspoon ground cloves. 1/4 teaspoon ground allspice.
Instructions: Place corned beef brisket in the Instapot or slow cooker. Add chopped cabbage, sliced onion, minced garlic, mustard seeds, apple cider vinegar, salt, pepper, ground mustard, ground cloves, and ground allspice over the beef. Pour beef broth over the ingredients. For Instapot: Set on high pressure for 90 minutes. For Slow Cooker: Cook on low for 8 hours. Once cooking is complete, allow pressure to release naturally for 15 minutes before quick-releasing any remaining pressure. Carefully remove the corned beef from the pot and slice it against the grain. Serve the sliced corned beef with the cabbage and onions, along with some of the cooking liquid.
