There are lots of fresh, crunchy vegetables and creamy avocado in this California veggie sandwich, which makes it a filling and healthy meal.
Ingredients: 2 slices whole grain bread. 1/4 avocado, mashed. 1/4 cup shredded carrots. 1/4 cup alfalfa sprouts. 2 slices tomato. 2 slices cucumber. 2 slices red onion. 2 lettuce leaves. 2 tablespoons hummus.
Instructions: One piece of bread should have avocado mashed on it. Put tomato slices, cucumber slices, red onion slices, alfalfa sprouts, shredded carrots, and cucumber slices on top of the avocado. On the other piece of bread, put lettuce leaves. The lettuce should have hummus on it. Put the two slices together to make a sandwich. Cut in half and serve.
