Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 2 teaspoons vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1/2 cup finely chopped cashews. 1/4 cup cream cheese, softened. 1/4 cup powdered sugar. 1/2 teaspoon almond extract.
Instructions: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg and vanilla extract and mix them in well. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the finely chopped cashews. Cover the cookie dough and chill in the refrigerator for at least 1 hour. Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a small bowl, mix together the cream cheese, powdered sugar, and almond extract until smooth. Roll the cookie dough into 1-inch balls. Flatten each ball slightly and place a small amount of the cream cheese mixture in the center. Fold the edges of the cookie dough over the cream cheese filling and roll back into a ball shape. Place the filled cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
