Ingredients: 1 lb ground beef. 1/4 cup coconut flour. 1/4 cup finely chopped parsley. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1 tsp dried oregano. 1 tsp sea salt. 1/2 tsp ground black pepper optional, omit for AIP. 1/4 cup bone broth or water. 1/4 cup coconut aminos. 1 tbsp apple cider vinegar. 1 tbsp olive oil.
Instructions: In a mixing bowl, combine ground beef, coconut flour, parsley, onion, garlic, oregano, sea salt, and black pepper if using. Mix well. Form the mixture into meatballs, about 1-1.5 inches in diameter. In the Instant Pot, add bone broth or water, coconut aminos, apple cider vinegar, and olive oil. Stir to combine. Carefully place the meatballs into the Instant Pot, ensuring they are submerged in the liquid. Close the lid and set the Instant Pot to manual high pressure for 8 minutes. Once the cooking time is up, allow natural pressure release for 5 minutes, then quick release any remaining pressure. Carefully open the lid, and using tongs, transfer the meatballs to a serving dish. Serve hot, garnished with additional parsley if desired. Enjoy!
