Ingredients: 1 lb large shrimp, peeled and deveined. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon chili powder. 1/2 teaspoon cayenne pepper. Salt and black pepper to taste. 2 tablespoons lime juice. 2 ripe avocados. 1/4 cup Greek yogurt. 1/4 cup chopped fresh cilantro. 1 lime, zest and juice. 1/4 teaspoon cumin. Salt to taste.
Instructions: In a bowl, combine shrimp, olive oil, minced garlic, chili powder, cayenne pepper, salt, black pepper, and lime juice. Toss to coat shrimp evenly. Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until pink and cooked through. In a blender, combine ripe avocados, Greek yogurt, chopped cilantro, lime zest, lime juice, cumin, and salt. Blend until smooth and creamy. Serve the cooked shrimp with the creamy avocado cilantro sauce on the side for dipping or drizzle over the shrimp. Garnish with additional cilantro and lime wedges if desired.
