I'm afraid that Levi would want to die in peace now (or blazing glory), now that the promise is fulfilled. I mean, I feel like that's the only reason he's kept himself alive.

There’s a lot of opinion about this, but if you’d like mine it’s that Levi is someone who won’t run from death, but certainly won’t seek it out. He’s someone who will gladly give his life, but not someone who will throw it away.  Fulfilling his vow doesn’t change that. What it does change is that when it comes time for Levi to meet his end, whether that be in a blaze of glory or as someone old and gray, he’ll have one less regret. Fulfilling his vow provides a sense of completion that he might not have had otherwise.
