Ingredients: 2 lbs pork shoulder, cut into cubes. 1 cup pineapple chunks. 1 onion, chopped. 3 cloves garlic, minced. 1 red bell pepper, sliced. 1/4 cup soy sauce. 2 tablespoons brown sugar. 1 tablespoon ginger, grated. 1 teaspoon thyme. 1 teaspoon allspice. 1/2 teaspoon cinnamon. 1/2 teaspoon black pepper. 1/4 teaspoon cayenne pepper. 1/4 cup orange juice. 2 tablespoons lime juice. Salt to taste.
Instructions: In a slow cooker, put the pork shoulder, pineapple chunks, onion, garlic, and red bell pepper. Spices like black pepper, cayenne pepper, orange juice, and lime juice should all be mixed together in a small bowl with soy sauce. Add the sauce to the slow cooker with the vegetables and pork. Use a stir to mix. The pork should be cooked on low for 6 to 8 hours or high for 3 to 4 hours, with the lid on. Remove from the heat and use two forks to shred the pork. Then, mix it well with the sauce. If you think it needs more salt, give it a taste. Warm it up and serve it with rice or your favorite side dishes.
