Ingredients: 1 lb dried navy beans, soaked overnight. 1 cup pineapple chunks. 1/2 cup cooked and diced ham. 1/2 cup brown sugar. 1/4 cup ketchup. 1/4 cup molasses. 1/4 cup Dijon mustard. 1 onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon ground ginger. 1/2 teaspoon black pepper. 1/2 teaspoon smoked paprika. 4 cups chicken or vegetable broth.
Instructions: After sowing, add the navy beans to the slow cooker. To the slow cooker, add the chopped onion, minced garlic, ground ginger, diced ham, brown sugar, ketchup, molasses, Dijon mustard, black pepper, and smoked paprika. Add the vegetable or chicken broth to the mixture and thoroughly mix. Once the beans are soft, cook them on low for 6 to 8 hours with a cover on. As the beans cook, stir them occasionally to make sure the flavor is distributed evenly. After cooking, taste and adjust seasoning, then serve hot. If preferred, add more pineapple chunks as a garnish.
