These Surprise Inside Muffins are a delightful treat with a hidden jam or jelly filling that will amaze your friends and family. They are perfect for breakfast or as a sweet snack any time of the day.
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup brown sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup unsalted butter, melted. 2 large eggs. 1 cup buttermilk. 1 tsp vanilla extract. 1 cup of your favorite jam or jelly surprise filling. Powdered sugar for dusting optional.
Instructions: Warm your oven up to 350 F 175C and put paper liners in a muffin tin. The flour, brown sugar, baking powder, baking soda, and salt should all be mixed together in a large bowl. Put the melted butter, eggs, buttermilk, and vanilla extract in a different bowl and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix it too much; a few lumps are fine. Put half of the muffin batter into each muffin cup. If you put a spoonful of your favorite jam or jelly in the middle of each muffin cup, it will be filled with something unexpected. Cover the jam or jelly with more muffin batter, making sure that each cup is about two thirds full. The muffins should be baked in a hot oven for 18 to 20 minutes, or until they are golden brown and a toothpick stuck into the muffin not the filling comes out clean. After taking the muffins out of the oven, let them cool for 5 minutes in the pan before moving them to a wire rack to cool all the way through. If you want, you can add powdered sugar to the muffins after they have cooled for a sweet finish. Watch as they gasp in shock when you tell them that these tasty muffins have surprise fillings inside.
