This Slow Cooker Whole Roaster Chicken recipe is incredibly easy and results in moist, flavorful chicken that practically falls off the bone. The slow cooking process allows the chicken to absorb all the delicious flavors of the spices and vegetables.
Ingredients: 1 whole roaster chicken about 4-5 pounds. 2 tablespoons olive oil. 1 teaspoon salt. 1 teaspoon black pepper. 1 teaspoon paprika. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 onion, quartered. 2 carrots, chopped. 2 stalks celery, chopped. 1 cup chicken broth or water.
Instructions: Rinse the chicken and pat dry with paper towels. In a small bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, and onion powder to create a spice rub. Rub the spice mixture all over the chicken, including inside the cavity. Place the quartered onion, chopped carrots, and celery in the bottom of the slow cooker. Place the seasoned chicken on top of the vegetables. Pour chicken broth or water around the chicken. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and tender. Once cooked, carefully remove the chicken from the slow cooker and let it rest for a few minutes before carving.
