Dream date:
outser space. showing the lovely lady the stars and how beautiful they are, and seeing the love and admiration he has for the universe reflected in her eyes. and maybe afterward they could get some sweets or something.
Modern job:
as expressed in the human verse, he would be a glass blower. It's a unique job, and Memory enjoyed shaping the super-heated glass in space when he was still a Tardis. He's not very good and the sculpting part of the job, but his command of color is phenomenal.
Security item:
No, he didn't have anything. The Paragon was his master, and I don't think she would allow him to have a teddy bear or blanket to cuddle.
Three quirks:
He runs his hand through his hair when he's upset.
He puts his hands in his pockets when the situation's awkward or he doesn't know what to do.
He bites his lip when he's excited or eager for something.
