Kakina is a cruciferous vegetable cultivated across Gunma and Tochigi prefectures in central Japan. In early spring, the new shoots are harvested one after another and used in cooking, so they are called kakina, or "scraped vegetables." They have a good taste, soft, and are usually eaten as boiled vegetables, but this time, I tried stir-frying them with butter, salt, and pepper.

カキナのバター炒め (prose, cooking)
カキナはアブラナ科の野菜で、日本の中央、群馬県と栃木県に跨って栽培される地場野菜である。春先、新芽が出てきたところを、次々に収穫して料理に使うので、掻き取り野菜=カキナと呼ばれる。食味は良好で柔らかく、お浸しにして食べるのが一般的だが、今回はバター、塩、胡椒で炒めてみた。
