Green chutney Palav (Vegan)
I recently discovered this wonderful recipe from the state of Karnataka, India. This recipe is so easy and is perfect for summer lunch! The recipe requires very little spices and it could be made with any kind of rice available in the market.
So, first I soaked two cups of rice in water for 30 minutes. In the meantime, I chopped all my vegetables(Carrots, onions, potatoes and beans).
For the chutney, I took some coriander leaves, mint leaves, 2 garlic cloves, a little piece of ginger, a little piece of coconut, one green chilli, 1/2 teaspoon of cumin seeds and two teaspoons of water. Added everything to the grinder and made a paste until it was smooth. Coconut is optional here but it adds a natural sweetness to the rice.
Before starting the cooking process, you have to decide what kind of utensil you want to use. Pressure cooker or a heavy pot. I prefer the cooker as it is deep and has a heavy base. Also, it takes just one whistle to cook the rice evenly.
I heated two tablespoons of vegetable oil in the cooker and added cinnamon, bay leaf, cloves, dry chilli, green and black cardamom an peppercorns. Waited for 30 seconds and added chopped onions.The onion
needs to be cooked until it is golden brown. Later I added chopped vegetables and cooked for another 5 minutes. Later added some salt, soaked rice and 4 cups of water. Mixed everything and waited for a boil. This is the time to put the cover and wait for the first whistle. If you are cooking in a pot then cover it with a lid.Just wait for the water to evaporate and check if the rice cooked through.
I like to eat it with roasted poppadum, fresh Salad and a lemon wedge. Tastes amazing 🙂🥰
