Happy (slightly belated) valentine's day, Kat!
Hi, it's me, your secret valentine :) what better way to celebrate valentine's day than eating something sweet? Obviously, baking something sweet and then eating it. So here's my favorite recipe for vegan brownies!
They're sweet and fudgy, but you can make them more cakey by substituting some of the cocoa powder with more flour.
The recipe is as follows:
140 g (1 cup) all purpose flour
20 g (1/4 cup) cocoa powder
80 mL (1/3 cup) neutral oil
200 g (1 cup) vegetable milk (I like to use almond)
200 g (1/2 cup) melted dark chocolate
75 g (2/3 cups) chopped walnuts
5 g (1 teaspoon) baking powder
And it's as easy as mixing the dry ingredients with a fork to get rid of the clumps, adding the oil, chocolate, and milk (you can add more milk if the batter is too dry), and finishing by incorporating the walnuts. Then, bake in a 180°C/350 F (or 160°C/320 F fan) oven for 25-30 minutes, or until a skewer comes out of the middle clean. If you like them more fudgy, you can put them in the fridge for a few hours after they've cooled!
