I'm sure there's more out there than I'm aware of. Um, I have lots of favourite fics (check my #fic rec tag for a few if you want?) but here are some that I love especially for their characterization:
Thursday's Child is an obvious rec, if you can find a PDF of that. It doesn't sugar coat the relationship as something tender or romantic. It's a realistic portrait of the darkest versions of the characters, and I really appreciate someone being able to acknowledge their low point potential and really capture it brilliantly.
Named is exquisite. It's simply gorgeous to Castiel, the story itself is imaginative and exciting, and Dean's voice is written very well.
Carry On Up This Broken Tide is the best civilian AU ever written, in my opinion. The story is excruciatingly realistic, in my opinion, and amazingly translates the struggles and personalities of characters who were written in a supernatural world to our world. It's another fic that doesn't paint destiel as something happy or easy.
Asunder by Rageprufrock is an AU I haven't read for a while, but I love Dean's characterization through his choice of career in the child protection services.
Inevitable Homoeroticism in Spanish Romantic Heroes I also really liked for depicting Dean in an intellectual setting without needing to change his character because of the whole "Dean is dumb in canon" misconception or whatever

Doodled a lot of tengu lately. Here are the best ones. All inspiration comes from katlay who has made some super awesome amazing comics about a tengu and a witch and I love them basically a lot. They're cute, fun, and very enjoyable and I'd encourage you to go read them too. Bonus! I thumbed out some tengu take off thing.
