Paleo Pad Thai for #dinner. Made with #kelpnoodles, stir-fried #carrots and #zucchini and a #homemade sauce of #coconutaminos, #almondbutter, and lots of #ginger and #garlic. Served with #lime juice, #fresh #basil, and crushed #cashews on top. I also sautéed some chopped steak in a separate pan, but it didn't sound good, so I made mine without and didn't miss it one bit. For dinner tonight I tried a new food, kelp noodles!!! ✨😍✨ Mmmm, they're really good. I topped them with a miso garlic guacamole, roasted bell pepper, fresh tomatoes, and scallions. Boy it really hit the spot too!!! ✨🍽💕 I've been loving simple dishes and craving noodles so this dish really hit all the cravings I was having. I've been 100% grain free for the past week and it feels good. 🌟🌟🌟 My digestion seems to be on a good track and I am so thankful. This Almond Butter Pad Thai Sauce is a creamy and flavorful alternative to traditional Pad Thai sauce, paired with nutrient-rich kelp noodles and colorful vegetables for a healthy and satisfying meal.

Ingredients: 1/2 cup almond butter. 1/4 cup soy sauce. 2 tablespoons rice vinegar. 2 tablespoons maple syrup. 1 tablespoon lime juice. 2 cloves garlic, minced. 1 teaspoon grated ginger. 1/4 teaspoon red pepper flakes. 1 package kelp noodles, rinsed and drained. 1 cup shredded carrots. 1 cup thinly sliced bell peppers. 1 cup bean sprouts. 1/4 cup chopped cilantro. 2 green onions, thinly sliced. 2 tablespoons chopped peanuts optional, for garnish.

Instructions: In a small bowl, whisk together almond butter, soy sauce, rice vinegar, maple syrup, lime juice, garlic, ginger, and red pepper flakes until smooth. Set aside. In a large bowl, combine kelp noodles, shredded carrots, bell peppers, bean sprouts, cilantro, and green onions. Pour the almond butter sauce over the noodle mixture and toss until well combined. Garnish with chopped peanuts, if desired, before serving.

A colorful and healthy salad with kelp noodles, fresh veggies, and a lemon-almond ginger dressing that is really zesty. This rainbow-colored salad is not only nice to look at, but it's also full of flavors and textures that will make your taste buds happy.

Ingredients: 2 cups kelp noodles. 1/2 cup red bell pepper, thinly sliced. 1/2 cup yellow bell pepper, thinly sliced. 1/2 cup green bell pepper, thinly sliced. 1/2 cup carrot, julienned. 1/2 cup purple cabbage, thinly sliced. 1/4 cup fresh cilantro leaves. 1/4 cup sliced almonds. 2 tablespoons sesame seeds. 1 lemon, zest and juice. 3 tablespoons almond butter. 1 tablespoon fresh ginger, minced. 2 tablespoons soy sauce. 1 tablespoon honey. 2 tablespoons water. Salt and pepper to taste.

Instructions: First, wash the kelp noodles under cold water and let them drain completely. The red bell pepper, yellow bell pepper, green bell pepper, carrot, purple cabbage, and cilantro leaves should all be put in a large salad bowl. Spread the almond and sesame seeds out in a small skillet. Heat it over medium-low heat and toast them until they turn golden brown. Take it off the heat and set it aside. Making the dressing: In a different bowl, mix the lemon zest, lemon juice, almond butter, ginger that has been minced, soy sauce, honey, and water. Add pepper and salt to taste. Place the salad ingredients in a bowl. Add the lemon almond ginger dressing. Toss the salad ingredients together until they are well covered. To make the salad crunchier and taste better, sprinkle the toasted sesame seeds and almonds on top. Rainbow Kelp Noodle Salad is ready to be served right away.
