This Keto Coconut Curry Chicken is a flavorful and comforting dish packed with healthy fats and protein. It's easy to make and perfect for a satisfying meal on a ketogenic diet.
Ingredients: 1 lb chicken thighs, diced. 1 cup coconut milk. 1/2 cup chicken broth. 2 tbsp coconut oil. 1 onion, diced. 2 cloves garlic, minced. 1 tbsp ginger, grated. 1 tbsp curry powder. 1/2 tsp turmeric powder. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: In a skillet, heat coconut oil over medium heat. Add diced chicken thighs and cook until browned. Remove chicken from the skillet and set aside. In the same skillet, add diced onion, minced garlic, and grated ginger. Saut until fragrant. Add curry powder and turmeric powder, stir well to combine. Pour in coconut milk and chicken broth, stirring to incorporate. Bring the mixture to a simmer, then add the cooked chicken back into the skillet. Allow the curry to simmer for 10-15 minutes, or until the sauce has thickened and the chicken is cooked through. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
