Ingredients: 4 fish fillets such as cod or tilapia. Salt and pepper to taste. 2 tablespoons olive oil. 1/4 cup tamarind paste. 2 tablespoons water. 1 tablespoon soy sauce or coconut aminos for strict keto. 1 teaspoon minced ginger. 1 teaspoon minced garlic. 1 tablespoon erythritol or preferred keto-friendly sweetener. 1 tablespoon chopped cilantro for garnish.
Instructions: On both sides, salt and pepper the fish fillets. Mix erythritol, ginger, garlic, soy sauce, water, and tamarind paste in a small bowl. Do this until the sauce is smooth. In a pan, heat the olive oil over medium-high heat. Before adding the fish fillets, make sure the oil is hot. Sear each side for three to four minutes, or until golden brown and cooked all the way through. Take the fish out of the pan and set it aside. Add the tamarind sauce to the pan and let it cook for two to three minutes, until it gets a little thicker. Add the sauce to the fish fillets that have been seared.
