Enjoy a low-carb Keto Twix Eis, which is creamy, crunchy, and sweet. The almond-coconut crust is buttery, and there are layers of sugar-free caramel and chocolate inside. It's a treat that won't break your ketogenic diet.
Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup powdered erythritol. 1/2 cup unsalted butter, melted. 1 tsp vanilla extract. 1/4 tsp salt. 1/2 cup sugar-free chocolate chips. 2 tbsp coconut oil. 1/2 cup sugar-free caramel sauce. 2 cups heavy cream. 1/4 cup powdered erythritol.
Instructions: In a bowl, mix almond flour, coconut flour, powdered erythritol, melted butter, vanilla extract, and salt until dough forms. Press dough into a lined baking dish and bake at 350F 175C for 10-12 minutes until golden brown. Let it cool. Melt chocolate chips with coconut oil and pour half into ice cube molds. Freeze until set. Spread sugar-free caramel sauce over the cooled crust. Whip heavy cream with powdered erythritol until stiff peaks form. Spread half of the whipped cream over the caramel layer. Cut the frozen chocolate into bars and place one on top of each whipped cream layer. Cover with the remaining whipped cream and freeze until set. Once frozen, cut into squares and serve chilled.
