Ingredients: 1 large cauliflower head, cut into florets. 2 tablespoons olive oil. 2 cloves garlic, minced. 1/4 cup unsweetened almond milk. 2 tablespoons butter or ghee. Salt and pepper to taste. Optional: chopped chives for garnish.
Instructions: In a large pot, steam the cauliflower florets until tender, about 10-12 minutes. Meanwhile, heat olive oil in a skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Transfer the steamed cauliflower to a food processor. Add the garlic, almond milk, and butter or ghee. Blend until smooth and creamy. Season with salt and pepper to taste. If the mash is too thick, you can add more almond milk for desired consistency. Garnish with chopped chives if desired. Serve hot and enjoy!
