A creamy mash made from roasted carrots and leeks that is rich and full of flavor. This dish is good for people on the keto diet, full of healthy ingredients, and naturally sweet from the roasted vegetables.
Ingredients: 6 medium carrots, peeled and chopped. 2 leeks, sliced. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. 2 tablespoons butter or ghee. 2 tablespoons heavy cream optional. Fresh parsley for garnish optional.
Instructions: Preheat oven to 400F 200C. In a baking dish, toss carrots, leeks, and garlic with olive oil, salt, and pepper. Roast in the preheated oven for 25-30 minutes or until vegetables are tender and slightly caramelized. Transfer roasted vegetables to a food processor or blender. Add butter or ghee and heavy cream, if using. Blend until smooth and creamy. If needed, adjust consistency with more cream or a splash of water. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving, if desired.
