Indulge in the rich, smoky flavor of this glazed ham, prepared to perfection in a smoker. The brown sugar glaze adds a delightful sweetness to complement the savory notes of the smoked ham.
Ingredients: 1 whole ham 8-10 lbs. 1 cup brown sugar. 1/2 cup Dijon mustard. 1/4 cup apple cider vinegar. 2 tablespoons honey. 1 tablespoon Worcestershire sauce. 1 teaspoon ground black pepper. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon smoked paprika. Wood chips for smoking hickory or applewood. Water for soaking wood chips.
Instructions: Preheat smoker to 225F 107C. Trim excess fat from the ham, leaving a thin layer for flavor. Score the ham by making shallow cuts in a diamond pattern on the surface. Soak wood chips in water for at least 30 minutes. In a bowl, mix brown sugar, Dijon mustard, apple cider vinegar, honey, Worcestershire sauce, black pepper, garlic powder, onion powder, and smoked paprika to create the glaze. Place the ham in the smoker, and add soaked wood chips to produce smoke. Brush the ham with the glaze, and continue to smoke for 4-5 hours or until the internal temperature reaches 140F 60C. Apply the glaze every 30 minutes during the smoking process. Once done, remove the ham from the smoker and let it rest for 15 minutes before carving. Serve slices of smoked ham with additional glaze if desired.
