Ingredients: 2 parsnips, peeled and chopped. 2 turnips, peeled and chopped. 1 celery root celeriac, peeled and chopped. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1/2 cup heavy cream. 2 tablespoons olive oil. Salt and pepper to taste. Optional toppings: chopped chives, crispy bacon bits.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the minced garlic and chopped onion and saut until the onions are soft and the garlic smells good. Chop up some parsnips, turnips, and celery root and add them to the pot. Saut for another 5 minutes. Add the vegetable broth and boil the whole thing. Turn down the heat, cover, and let it simmer for twenty to twenty-five minutes, or until the roots are soft. Blend the soup with an immersion blender until it is smooth and creamy. Add the heavy cream and season with pepper and salt to taste. Stir the soup every now and then for another 5 minutes, or until it's hot all the way through. Check the seasoning and make changes if needed. Serve hot, with toppings like chopped chives and crispy bacon bits that you can choose to add.
