Ingredients: 6 slices bacon. 2 large tomatoes, sliced. Salt and pepper to taste. 1 tablespoon olive oil. 1 tablespoon chopped fresh parsley optional.
Instructions: Preheat oven to 400F 200C. Place bacon slices on a baking sheet lined with parchment paper. Bake bacon in the preheated oven for 10-15 minutes or until crispy. Remove bacon from the oven and drain excess fat on paper towels. Let cool slightly. In a skillet, heat olive oil over medium heat. Add tomato slices to the skillet and cook for 1-2 minutes on each side until lightly browned. Season tomatoes with salt and pepper to taste. Transfer cooked tomatoes to a serving plate. Top each tomato slice with a piece of crispy bacon. Garnish with chopped fresh parsley if desired. Serve hot and enjoy!
