These Keto Buttermilk Biscuits taste like KFC buttermilk biscuits, but they are made with ingredients that are good for you. They are light and buttery, and a great choice for people who want a low-carb biscuit.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 2 large eggs. 1/4 cup sour cream. 1/4 cup unsweetened almond milk. 1 tablespoon apple cider vinegar.
Instructions: Preheat oven to 400F 200C and line a baking sheet with parchment paper. In a large mixing bowl, whisk together almond flour, coconut flour, baking powder, and salt. Cut in the cold cubed butter until the mixture resembles coarse crumbs. In a separate bowl, beat the eggs, sour cream, almond milk, and apple cider vinegar until well combined. Pour the wet ingredients into the dry ingredients and stir until a dough forms. Divide the dough into 8 equal portions and shape into biscuits. Place them on the prepared baking sheet. Bake for 12-15 minutes, or until the biscuits are golden brown and cooked through. Allow the biscuits to cool slightly before serving. Enjoy!
