The Kingdom Hearts novels are a series of books written by Tomoco Kanemaki, containing artwork drawn by Shiro Amano. Originally, they were only released in Japan, but we now have the official English translations for most books. (we are only missing the spin offs) The few games that don’t have novels made for them are the mobile games. (unfortunately)
Keep in mind that most of the books when translated into English were combined into larger volumes. For example, kh2 vol 1 and 2 were put together to make a bigger volume 1. So, if you come across any fan translations titled "vol 4 of _" or " vol 5 of _" it might be labeled as a different vol in the English version, but it contains the same story.

I could be wrong, but I read online that Yen Press recently lost the rights to the English novels and manga. This makes it hard to find the physical english copies anymore. When shopping for the books online, please make sure you're purchasing the correct language.

Short Stories Vol. 2 AXEL SEVEN DAYS
This is the second spin off in the series. It also lacks an official English translation. Although the fan translation is technically unfinished, It's only missing the chapters that according to the translator, were just retellings of the Pride Lands and Halloween Town worlds. This website is safe and has no download option available.

In Japan, if you preordered Kh2 Final Mix, the book Another Report was provided with your game. Roxas—Somewhere in Time, and a directors report are included in this book, which thankfully have fan translations that I've linked below. These have never been officially translated to English.

Sora cried on his knees for Riku because he missed him—NOT because he thought Riku was dead
Especially for those who aren't into Soriku they somehow think because he thinks he's dead he does that?
Like no, he JUST MISSES HIM all that much. If you don't even ship it that's fine, but like he still misses him.
In Kingdom Hearts 2, Land of Dragons Sora runs into someone who appears to be an organization member because of the coat (however it's Riku)
In the novel (I'll be using the novel for inside thoughts that the characters think) Sora states how it was really fun to fight him despite being from organization XIII.
Then in the novel he states
The fight reminds him of when he fought with Riku and makes him believe that is Riku. Because of that, he is excited and happy.
And every chance that something comes up that makes him realize Riku was there, he gets excited and is just elated.
And he realizes it's Riku because of the wording that Shang tells him. That's when he says At least I know he's okay and he's super happy about that.
Then when he sees Mulan and Shang he cries and thinks of himself and Riku. He cries because he misses him, this happens in the game. And in the novel he is basically crying because he is so happy Riku is alive.
He finds out he is alive here— not then. And after this ( and even before) he goes through just happy whenever he thinks of him.
Even later when he gets Mickey to eventually tell him about the promise he made with Riku, Sora is happy and states you made a promise with Riku that means he's okay.
So when he cried on his knees, it's because Sora just misses him so much— not because he thinks Riku is dead.

Some mysterious quotes at the beginning of each world chapter in the Re:Coded novel. Some of them seem likely to be coming from Namine (or data Namine), but they are still pretty ambiguous:
1. Destiny Islands (After Data Sora’s dive to the heart) “That’s where the whole story began...as did the glitches. And for good reason- because nothing ever happens by chance in our stories. Everything is connected. This is where someone else set off on a journey too, long ago. Does this world feel small to you, Sora? Or does it feel large? Who will be the one to unravel the secrets of this world- of the Destiny Islands?
2. Traverse Town “Does it feel like deja vu? Or more like the start of a new story? What are you dreaming now, I wonder?
3. Wonderland “Our memories are connected, like links in a chain. Those same chains are what bind us all together. I don’t destroy memories, I just undo the links and rearrange them. That connection- that’s what’s important, Sora. Both in our memories and in our bonds with each other.”
4. Olympus Coliseum “Who do you think made this special world? And what do you think was necessary to enter it?
I want to see you, Sora. There’s so much I have to tell you. This is all so that you can be ready. The world is full of hurt- the real bugs. What do you think is behind it?”
5. Agrabah “Little by little, the world is waking up. And it’s changing, too. Every world can change, whether by healing or by hurting. I want to believe that sleep always ends in waking.
6. Hollow Bastion “There are no coincidences; fate happens as it was planned. As for whose plan it is...I couldn’t tell you. Not yet. But, Sora, we are friends. We will always be friends- always. Everyone you’ve met along the way- Riku, Mickey, Donald, and Goofy- we’re all here for you. Don’t forget that.”

I think I’ve mentioned before that I believe Re:Coded contains mountains of foreshadowing for the future of the series after kh3, and Kanemaki occasionally slips in hints and spoilers for future games that eventually become canon, so I will be keeping these quotes in mind. I’m especially interested in the hinting that there is some greater mystery to the Destiny Islands (which, after kh3 showed us once again a strange door appearing in front of the secret place, seems pretty relevant), and the whole “Little by little, the world is waking up” bit. I’m increasingly interested in the idea that the kh universe is something of a “dream” (again, in the lore of kh this doesn’t mean it’s not real in the sense that it doesn’t matter, just that it’s not the greater reality), that KH itself will have to be “awoken”.
