Vegan Kimchi Recipe
Vegan kimchi is a plant-based twist on Korea’s iconic fermented dish, offering the same bold, tangy, and spicy flavors without any animal products. It features napa cabbage, radish, carrots, and scallions, seasoned with gochugaru (Korean red chili flakes), garlic, ginger, and sea salt. To replicate the traditional umami depth, ingredients like kombu (seaweed), miso paste, or soy sauce are used instead of fish sauce or shrimp paste. Naturally fermented, vegan kimchi is rich in probiotics, promoting gut health and aiding digestion. Its crunchy texture and vibrant taste make it a versatile addition to rice dishes, stews, salads, or enjoyed on its own.
