No filter applied. This will 100% be making the Driveway Diner pick-up menu very, very soon. The meat simmered for 5 hours. The juices were reduced and fortified with Pedro and mounted with buttery demi glace (house made). The sweets were roasted to caramelized perfection. I mashed them with chipotles, cane syrup, and butter. The baby peas and haricot were steamed and simply seasoned. KING ISLAND FARM TOURS, MEET YOUR BEEF: Double cooked King Island beef in Tasmanian stout with Duchess potatoes and gremolata. We had an excellent farm tour and learned so much about cattle and their life cycle. Our host Ana was such a delight. This is a must do for your list when going to King Island.
