Passing on My Persian Cooking
This past weekend my best friend asked me to teach him how to make an easy Persian dish that he could learn to cook on his own. The dish I taught him to make was کتلت (Kotlet). Kotlet are essentially pan fried meat and potato patties. This is one of my favorite dishes, and I can still remember when my grandmother taught me to make them as a kid.
For me, cooking and food is such a big part of being Persian. Sharing this part of my culture with a close friend was such an awesome experience. I was surprised when my friend asked me to teach him to make this dish, and even more shocked when he wanted to learn how to pronounce the dish in Farsi, when its eaten, etc. I feel really lucky to have people in my life who I can show this part of my Persian heritage that is often not known to people outside the culture.
Heres my recipe for classic کتلت (Kotlet):
Ingredients:
White Potatoes
Ground Beef
Onion
Bread Crumbs
Oil
Salt
Pepper
Cumin
Turmeric
If you want to make sure your patties stay together as you cook them, add an egg to your mix as a binder.
Steps:
Skin your potatoes then boil them until they can be punctured with a fork.
Once the potatoes are cool enough to hold, grate the potatoes.
Blend the onion in a food processor, or dice the onion as small as possible.
Mix all the ingredients and spices well.
Create golf ball sized balls of the mix. (For extra crunchy kotlet, coat the balls in extra bread crumbs)
Heat oil or butter in a deep pan.
Place the balls in the hot oil and smush them into patties.
Flip the patties after a couple minutes.
Serve!
I love to experiment in the kitchen and tweak classic Persian recipes using non traditional ingredients. Feel free to switch the white potatoes with sweet potatoes, carrots, or even cauliflower; and the beef for your favorite form of ground meat, turkey, or chicken.
