Koyadofu.
Back in Yanxia, there were several mountains that could rise so high that their winter would be really harsh, even freezing the tofu. We don’t know if it was the Mitsuhara estate or the old Takahashi, and for ages they would wage into conflicts over this, but someone had the brilliant idea to pick the frozen tofu, defrosted it, and separate the water from the soybean block. It became delicious and really nutritious! I love to fry my koyadofu and eat with soy sauce. It is hard to get those around Eorzea, but since the Doman Enclave reconstruction, it is becoming more and more common! Good for me!”
