One of the iconic scenes in Malayalam cinema is in the movie Kilukkam where Jagathy gets Porottas & Chicken to eat & then hides it from Revathi when she smells it only to discover her devoring the leg in the middle of the night much to the dismay of Mohanlal too. Chicken was never really made in our homes traditionally till the Broiler revolution hit home in 80s That is all the time when fried chicken really took off in popular culture in Trivandrum with notable ones like Kethel & Taj Hotel started specialising in their own versions. While I am generally not in favor of generic names like Goan fish curries because there are reductionist & don't do justice to the gazillion curries of any region . But I will make an exception for Trivandrum chicken fry which you probably now find in any corner of this city. This is my mom's take on it with crushed red chillies, curry leaves and fennel seeds in the batter .Crunchy on the outside, juicy on the inside . Always best to fry in small batches with temperature in the range of 160 to 180 degrees. This ensures that it cooks through without burning & absorbs lesser oil than shallow frying . The Maillard reactions are responsible for the browning of fat & sugar on the outside & the excellent conductor that oil is , ensures the chicken gets cooked quickly! Now I maybe mistaken but I have noticed that deep frying chicken in India is most popular in South India in numerous forms like 65, kabab, Pakodas . In North & West India, I have seen that only done in the Muslim pockets of the city like M A Road or Old Delhi . Mom had told me she was going to make a nice salsa to pair with this & I suggested her to include some ripe mango. She was apprehensive . I had to get on a work call. When I came back, I could see some ripe mango swimming in a nice spicy coconut curry.
