La Crawfish wants to provide crawfish year round while the competition is only seasonal. In a normal year crawfish season is March-June. The owner was not available for comment but the morning manager Chrissy (last name) was able to talk. She mentioned some difficulties trying to open the store like getting all the proper permits for a BYOB establishment, and how the top two selling items crawfish and chicken wings are the most expensive. “ Normally the other cajun places will wait until its the right season to get the best size for the best price, but we buy from the crawfish farms in austin year round no matter what the price, and we always get the best size” -Chrissy ( Houston is where the crawfish farms are at i believe she was mistaken about the source) La crawfish stands out from the crowd with different flavors to choose from and a super spicy challenge to win a free meal, shirt and your face on the Wall of Winners. In offering the best to the customers, La crawfish hopes to get a loyal customer base, which it will need to fight the cost if it wants to survive during off season months .
